Maite will discuss the role of convent cooking in the evolution of Mexican cuisine while demonstrating a dish from the 17th-century manuscripts of Sor Juana Inés de la Cruz.

The class is inspired by artworks in the exhibition Archive of the World: Art and Imagination in Spanish America 1500–1800.
