Pineapple-Rosewater Spritzer

Native to Brazil, the pineapple was first introduced into Europe in the 17th century. In 1640 England, a royal botanist described the pineapple as “sweet in smell… tasting as if wine, rosewater and sugar were mixed together.”

This cocktail is inspired by that poetic account.

1 pineapple, peeled, cored and cut into medium-sized chunks
6 cups water
1/4 cup sugar, skip if the fruit is sweet
juice from 2 lemons
2 teaspoons rosewater, or to taste (start using a little and add more to taste because it can be overwhelmingly perfumey)
1 ounce sparkling wine, tequila, gin, vodka or rum

In a blender combine pineapple, water, sugar (if using), lemon juice and rosewater. Blend well.

Fill 8 highball or old fashioned glasses with ice.

Strain the pineapple juice into each glass. Top with your booze of choice. Sip in the comfort of your home, pretend you’re on vacation and momentarily forget that we’re in a pandemic.
