Rosemary Margarita

Native to the Mediterranean, the ancient Greeks believed rosemary to be a magical herb that kept the brain sharp and protected from nightmares. For a clear mind and sweet dreams, this Rosemary Margarita is the perfect nightcap. Salud!

Tequila Rejón is the best out there and it happens to be my family’s brand.

With 44% alcohol it has a rich agave flavor that can’t be beat. In Texas, it is available in all Specs Liquor Stores, Alamo City Liquors in San Antonio, Sam’s Liquor in Laredo and Feldman’s in the Rio Grande Valley. Outside of Texas you can find it at Old Town Liquor in San Diego, CA and at David Bowler Wines in New York City.

¼ cup kosher salt
1 wedge lemon

1 ½ ounce Rejón tequila blanco
1 ½ ounce rosemary syrup
1 ounce fresh lemon juice
splash sparkling water

Make the rosemary simple syrup. Combine 1 cup water and 1 cup sugar in small saucepan. Add several sprigs of fresh rosemary. Heat until just barely simmering and remove from heat. Let the syrup steep for 10 minutes. Remove the rosemary and let cool completely before using.

Spread salt on a small plate. Rub lemon wedge around the rim of a glass. Dip into the salt and lightly coat. Set aside.

Fill a cocktail shaker with ice. Add tequila, rosemary syrup and lemon juice. Cover and shake until mixed and chilled, about 30 seconds.  

Fill the prepared glass with ice cubes and strain the chilled margarita into the prepared glass. Top with a splash of sparkling water and serve garnished with a sprig of rosemary.
